Two summers ago, the running joke among people who actually live in Encinitas was that Coast Highway 101 kept getting written about as a "wave" of new restaurants that never quite crested. This summer is different. Between April and September of 2026, the corridor is receiving its final anchors in a rolling sequence, and if you live here, the practical question has shifted from what's coming to how to pace a Saturday now that the map is filling in.

The story of Encinitas this summer isn't a list of openings. It's a sequence. Six operators, one corridor, and a calendar that finally rewards knowing when to show up where.

The 2026 Corridor, in Order of Arrival

The clearest way to see what's happening is to line the openings up by month. Read this as a resident's map, not a roundup.

1. Spring 2026 — Blank Slate, 101 North Coast Highway 101. Aron and Pam Schwartz, the husband-and-wife team who co-founded Ranch 45 in Solana Beach and left in late 2023, took over the former Chiko space. Aron spent nearly fifteen years at the San Diego Marriott Marquis, eight as executive chef. Pam is a sommelier who has worked at Nobu and cooked at the James Beard House. The layout is a twelve-seat chef's counter, indoor seating for fifty, and a patio that holds seventy-five. On nights without private events, the Schwartzes have said they plan community dinners with plates under thirty dollars.
2. April 2026 — Pastaria Vivi, Encinitas Village Shopping Center. A 1,740-square-foot space from chefs Brandon Jennings, William Treff, and Harrison Axelrod, whose résumés between them include Michelin-recognized kitchens. It is a pasta counter, a fresh-sauce case, a small à la carte dining room, an Italian retail shop, and a monthly pasta subscription box, all under one roof. It is also the exclusive retail home of Aisu Creamery, the small-batch gelato from Makoto Chino of Chino Farm.
3. Late Spring — Coffee Dose, expanded location at 687 2nd Street. Owner Jon Runion did not add a second location somewhere else. He roughly doubled the footprint to about 1,100 square feet on the same block, added a full kitchen, and can now serve tapas and pour beer and wine later in the day.
4. Late July to Early August — The Brant, 806 Coast Highway 101. Brothers Travis and Andrew Brummett are taking the former Beachside Bar and Grill site and building a 6,500-square-foot ground-level dining room with a 1,500-square-foot rooftop bar. Travis Brummett has said the goal is to bring "a family neighborhood restaurant vibe to Coast Highway," per San Diego Magazine.
5. September Target — Encinitas Brewing Company, 1588 Leucadia Boulevard. Four Encinitas residents took the former Islands Restaurant space at Encinitas Ranch Town Center and, on March 8, 2026, received a unanimous approval from the Planning Commission for a brewery, distillery, and restaurant. Construction is projected at roughly five months from start.
6. Already Anchoring — Rosemarie's Buns & Brews at 608 South Coast Highway 101, and Chick & Hawk at 145 Leucadia Boulevard, the fried-chicken concept from Tony Hawk and chef Andrew Bachelier. Both landed in late 2025 and are now the corridor's warm-up act.

Look at that list and the argument writes itself. None of these operators were recruited by a developer. They chose this town, and they chose different parts of it. Blank Slate anchors the south end. The Brant will anchor the middle. Encinitas Brewing lands in Leucadia, at a shopping center that co-owner Brian McBride, per his own remarks to the Planning Commission, described as quiet in a way that works for what they are building. The corridor, for the first time, has coverage from Cardiff-adjacent to Leucadia Ranch without dead zones.

What This Actually Changes About Your Week

The practical shift is smaller than the press coverage suggests, and more interesting. Before this year, the standing weekly rituals in Encinitas were farmers markets, a couple of concert series, and whichever surf-adjacent event happened to be that weekend. That rhythm is intact. What has changed is the number of walk-in options that are open past three in the afternoon on a Tuesday.

The City of Encinitas cultural arts calendar is the source of truth for the concert series. The 2026 Tramonto Music Festival, produced under the artistic direction of pianist Jacopo Giacopuzzi, continues at the Library, and the 2026 Music by the Sea season opens under artistic director and cellist Paul Tseng with pianist Justin Hansen. Both are intimate-room programming in a town that mostly gets credit for its beaches.

The Two Anchors Still Coming

If you are pacing the summer, the two dates worth holding loosely on the calendar are The Brant and Encinitas Brewing Company.

The Brant is the higher-variance opening. A 6,500-square-foot restaurant with a rooftop bar at 806 Coast Highway 101 is not a small bet, and the target of late July to early August is tight against the summer calendar. Travis Brummett, per San Diego Magazine, has worked in restaurants since he was nineteen, and the Huntington Beach original opened in 2023. The Encinitas version has a larger footprint and a full rooftop program the original does not have. Expect the first few weekends to be crowded in the way any 101 rooftop opening will be. Expect it to normalize by Labor Day.

Encinitas Brewing Company is the more locally consequential one. It is the city's first brewery. Four residents filed the permits that, in the Planning Commission's telling, nobody had filed before. Co-owner Ryan Van Biene has told local press that construction runs roughly five months and a September opening is the working target. What that changes for residents is walkable adjacency between the Encinitas Ranch Town Center and a taproom that is not a drive to Miramar or Vista.

A July Weekend, Plotted

For a resident who has read three generic "things to do in Encinitas" posts and closed the tab on all of them, here is one plotted weekend that only works because of the 2026 additions.

• Friday, late afternoon. Pick up fresh pappardelle and a jar of roasted-garlic Alfredo from the Pastaria Vivi counter at Encinitas Village. Cook it at home.
• Friday evening. Music by the Sea at the Encinitas Library on Cornish Drive. Doors thirty minutes before showtime.
• Saturday morning. Cardiff Farmers Market at MiraCosta San Elijo, then a walk down to Cardiff Reef.
• Saturday afternoon. Coffee Dose on 2nd Street for the tapas and beer program the expansion made possible.
• Saturday night. Blank Slate community dinner if you can get one of the counter seats. Otherwise Chick & Hawk on Leucadia Boulevard.
• Sunday. Moonlight Beach Concert, per the City calendar, then Leucadia Farmers Market at Paul Ecke Central.

Two of those stops did not exist in April. One of them did not exist a year ago. That is the story of this summer in a paragraph.

Ahead on the Calendar

Cardiff Dog Days of Summer returns on August 2, run by Cardiff 101 Main Street. The 16th Annual Taste of Cardiff already came and went on May 7, but its return is a spring marker worth putting on next year's calendar.
